Hi Amy,

in VCF go to Tools > Diagram > Diagram Measurements, there you can increase
the height and width of the canvas by inches or whatever units you have set
to use.
You can be generous, it's easy to reduce the canvas to fit the chart after
you've finished by going to Tools > Diagram > Size to Components.
