Actually, they would dry with salt on the beaches, or they'd cure
them in barrels. As for wailing later they'd also melt the blubber to
oil on location, before transporting it back in barrels by ship.
They still dry some cod that way to this day. Cod was important since
it could be preserved easily, and since Christians couldn't eat red
meats on Fridays, it was the meal of choice.
