There's some information about slaves, as held by Hunterdon
County residents, at the Hunterdon County Library.

Deats, Hiram E. "Marriages: Slaves and Negros, Hunterdon County,
1795-1875," Hunterdon Historical Newsletter, vol. 5, p. 95. R-NJ 974.971
[Barker, Bette Marie]. Guide to Family History Sources in the
New Jersey State Archives (Trenton: 1987). A good summary of how to
use the state archives and what you can expect to find there -- much more
than
just vital statistics. Original Hunterdon County records include births of
Negro
children (1804-35), Justice of the Peace dockets (1790-1947), mortgages/loan
office (1737-48), tavern licenses (1737-1870), and manumissions of slaves
(1788-1853). 929.1 and R 929.1
Although it is not listed on their website, I also found information in:
D'Autrechy, Phyllis B. More Records of Old Hunterdon County,
Volume 1 (Flemington, N.J.: 1998). Records from the Surrogate's Office
dealing with wills and guardianships...
You can find manumissions at the county court houses in NJ. Also,
there was a civil registration of slave birth required after the passage
of a New Jersey law, beginning July 4, 1804, every child born of a
slave was recorded with the county.
