I know of 2 Tunis Fisher's from about the same time period. One was the son of John Fisher and Mary Hoagland. The other was the son of Christopher Fisher and Charity Boss. I do not have anything further on this Tunis.
I had seen Tunis son of John and Mary to be married to a Mary Hagle on 6/16/1804 and had them with a son Peter. I received this from some old Fisher researchers and it was not confirmed by me. The only information that I found on this Tunis was a reference in a book by Cornelus Larison on the Fisher Family where he thought that Tunis married possibly a Coogle. Your information seems to fit much better though.
The following site sells reproductions of old genealogies and has the book by Larison. I do not own this but have viewed it at the Hunterdon County Historical Society and at the Newberry Library in Chicago. It is very interesting.

As far as Phebe Everitt is concerned, I have only her birth date of 20
October 1779. This date may have been incorrectly entered into the family bible
because her husband, Anthony Fisher's birth date was also entered as 20 October,
albeit in 1783. Phebe died after 1870 as she was shown living with her son,
Christopher Fisher, on the 1870 census.
