I use manuscript as source type for this.

Depends on whether these directories have been published.

<<Baby books written by the parents?

I use unpublished miscellaneous for baby books.

<< Exerpted biographical notices from newspapers? Although this is a card
file
in Ireland it is filmed by the LDS.

Since this is not the actual newspaper, I wouldn't call it a periodical
source type. I would use unpublished misc.

Church records or cemetery records from ledgers. Who authors it?

I use church or cemetery record for the source type. There are no authors on
these, unless you wish to you the institution as the author, but then
probably you would be repetitive in the endnote or bibliography.

Hope this helps.
