I suspect the problem is putting the eulogy in a Note tag. The default Note tag uses a Sentence Structure of:
[P] <|and [PO]> <[D]> <[L]> [M]
The [P] (that is person) variable will produce the She or He you are finding. Since you don't want that, you need to either remove it manually from each eulogy tag, or better, use a Tag Type that does not include it. You can use the Anecdote Tag, which has a default Sentence Structure of just [M] -- it will only print the contents of the Memo. Or you could create a custom eulogy tag with that Sentence Structure.
