I posed a similar question a couple of weeks ago and received the
following answer from Joe Makowiec:

"Your best bet is to do one of two things:
1) Add the godparent as a witness or role to the baptism tag.
2) Create a custom "Godparent" tag in the Other group.

Either method will print date, location, etc information in both
parties' reports. "

And then added onto that with this:

"I use both methods- a witness is used if the person is in the database
and the custom G-Parents I made is used if the person will not be in the
database."

I thought the last was a good point since some of my cousins do have
godparents outside of the family, and I don't really want to add those
people into my database. You can play with the sentences for the
godparents when you add them as witness so that you don't have to say
whether or not the person was physically present at the
baptism/christening ceremony--could say something like "[R:Godfather]
was named godfather."
