I have a family re-union that ran for about 8 years. I created a custom ReUnion tag and used one tag per year, filling in the date and place fields for each reunion. I also created a second custom tag type for those who filled out the registration form but didn't attend, since the registration form contained some important genealogical information which they were supposed to fill in. The registration forms, or a summary taken from them, became my sources for this data.

However, I found these tags were of dubious value in reports, even if important to see on the person detail screen. So I ended up flagging these tag types to not print.

You could also use a simple standard Note tag to summarize reunion attendance for each individual. Then you could allow that to print and enter the summary free-form, such as "John Brown attended most of the family reunions in Timbucktoo from 1918 to 1947, rarely missing the chance to catch up on the family news. He was, in fact, president of the association from 1940 to 1946."

You could create a First Reunion and Last Reunion tag to bracket reunion attendance in the same way the MilitBeg and MilitEnd tags work.
John Brown attended his first family reunion in 1918 in Kalamazoo.

John Brown attended his last family reunion in 1947 in Timbucktoo. He had rarely missed a year.

Alternatively, you could use one tag type, and different role sentences.

You could also use one umbrella Reunion tag, putting the date range (eg. "from ____ to ____") for the first and last reunions attended. The sentence might read "[P] attended family reunions [D] [L]. <[M]>". Then in the memo, or perhaps even in citation details, you could be more specific. For example, in the citation detail, after giving the page number(s), you could say "He is recorded as having attended in 1918, 1919, 1921, 1923, 1924, 1926, 1927 ... etc ... and 1947."

Memos can easily be printed, if desired, in the body of a report, citation details typically in the footnotes, and any tag type can be flagged to not print at all. Where you want the information to appear should be your guiding strategy.

There are obviously many ways to do this, just thought I'd give you some ideas.
