Thanks, Bobbie. The as-of dates are actually included in TMG (Tools >
Timeline Manager > USCENSS2). For others who don't know, the census taker
was supposed to record a household based on the people who were living there
on a given date. A person might be dead at the time the enumeration was
actually taken, but still appear on the census as if living since they were
living on the as-of date. I have always chosen to ignore the as-of dates
for purposes of data entry since we have no way of knowing whether the
census taker actually adhered to the as-of dates.
If you see my note to Terry, you'll see I have one of the more complex sets
of roles for census records. As you say, the actual ages often differ from
the enumerated ages. I've tried to construct my role sentences to bring the
differences forefront and center by presenting both real and enum. ages in
one sentence. So far, I'm not having any luck with the "witness" roles.

You should be able to find a month at least for the enumeration of each
census which would help calculate the age. I expect there is a chart out
there somewhere for all of them, but if you go to Ancestry's page:
http://www.familyhistory.com/index.asp#CENSUS and then click on each year
from that page it will give you the start dates of enumerations for each of
them. Would that help?
Personally, I include the age of enumeration in the memo field of the tag
instead, since many of them are different than the actual (or expected) age,
and this way I know that the data from the census is what is shown in the
tag.
