Dennis,
If the children are listed by name, then I would list them all as
witnesses to the will as HEIRS. (Or as MENTIONED IN WILL if they didn't
inherit.)
In my will tag I have HEIRS, MENTIONED IN WILL, and NOT MENTIONED IN
WILL. I use NOT MENTIONED a lot for when a child was still living, but
isn't mentioned in a parent's will. There are reasons for not
mentioning a child, such as they have already received their part of the
estate earlier, and that clues me in to look for their portion in an
earlier deed. The ones I really hate are the ones that only give the
child $1 "for reasons satisfactory to me." Those drive me crazy
wondering what did that poor child do.
But be careful about assuming that the children listed are his children.
My grandfather lists his step children as his children, although he and
his wife had only been married a few months.
I do encourage you to look up the Surrogate Court papers when you have
time. They will give a lot more information. In one court case I had,
the children had to prove that they were legal heirs (the will was
contested) and it was full of documents to prove their legality. (Twas
a shame this wasn't my ancestor, but his brother. <G>)
You say you are just getting into roles so I encourage you to look at

I have a number of names in a will from 1832, listed as "All children of
deceased". Additionally, "All to appear at Surrogate's Court 1 Oct.,
1832 at Johnstown."

Should I list all these children as Witnesses? Or should I use Roles
which I am just starting to get into? Or should I note them in some
other fashion. I'm using this to prove the relationship to the father.
