I start with the grantors in as the principals, the go to the grantees, but
I often have grantors or grantees as witnesses. Someday I hope to be able
to have more than two principals for some tags, or at least the option to
make tags primary for a person who is a witness.

Which role(s) are the principals, and which the witnesses?
I had been trying to do something like this in TMG for, and ended up making
2 tags, one for the grantors and one for the grantees, so both could be
principals in their own right, but your solution is very elegant :-)
