I was not kidding when I said it was warm here yesterday. When I came
out of the hospital at 4PM the therometer in my van said 78 and today at
3:30 it was 74 degrees.
Menudo is a real mexican dish.Also called Tripe and Calves' Feet Soup.
Yes, great for a hangover they say. But UGH.
Menudo
2 calves' feet
5 lbs. tripe, fresh and well cleaned.(Buy in any Arizona grocery
store)
3 cups "nixtamal"; or canned hominy
6 quarts water
2 onions, minced
4 garlic cloves
1 1/2 tablespoons salt
1 tablespoon marjoram (oregano)
Wash the calves' feet throughly: put in the water and cook for 1 1/2
HOURS. wASH THE TRIPE, CUT INTO SLICES OR PIECES ABOUT 1 INCH WIDE, AND
ADD TO THE CALVES' FEET WHICH HAVE BEEN CUT INTO SMALL PIECES; ADD THE
"NIXTAMIL", ONION, GARLIC, MARJORAM AND SALT. SIMMER 6 OR 7 HOURS. IF
CANNED HOMINY IS USED ADD THIS AFTER 4 HOURS OF SIMMERING.
SERVE WITH MINCED GREEN ONIONS AND BOTTLED CHILI SAUCE; THIS IS A SOUP
AND WILL SERVE APPROXIMATELY 24, BUT LESS IF ALLOWED TO BOIL DOWN.
WILL CHECK AROUND WITH MY MEXICAN FRIENDS AND FIND OUT IF THERE IS
ANOTHER WAY TO MAKE MENUDO. BUT THIS IS SUPPOSE TO BE THE SONORAN STYLE
THAT IS POPULAR AROUND HERE.
