4 lbs Pork or Beef ( cubed or shreaded)
1 large can PaPaz Red Chili Sauce ( I use reg tomato sauce)
I large can of tomato's ( crushed or sliced)
2 large cans od Hominy
2 large onions ( Chopped)
1tsp Camino Seed ( crushed) I use powdered kind
Fresh Garlic chopped
Salt to taste
2 bay leaves
Chopped celery ( I dont use this)
1/4 tsp oregano
Lawrys Season salt.
Black pepper to taste
Chili Peppers to taste ( I like mine very hot)
Brown meat and shread or cube it, with onions in about 1/4 cub Wesson Oil ( I
dont use the oil) add comino seed ( crushed) while meat is browning. When
meat is brown add chili sauce or tomato sauce, HOminy, green chile's,
oregano, garlic, celery, Bat leaves. I let it cook for a few hours, but it
really only need to cook for about 1 hour, as it cooks, add salt and balck
pepper to taste. You can add Masa flour for thicking if you like, but I dont
use it.. Serve with tortilla's or corn bread.
It took me a few times making it, to get it the taste the way I liked it to,
so I would change up from time to time and add different things to it.. I
have used potatoes' a few time in it too, and I have eaten it that has corn
in it..
Menudo and posole are both Mexican recipe's.. New mex, is a spin off of the
Mexican recipe and usually not near as good to me...
