Southwest style
2 lbs. tripe
2 lbs. pig feet
1 gal. can Hominy
Red Chile.
Wash tripe and pig feet,boil till tender about 3 to 4 hours. Add red Chile till suits your taste(Some like it really hot!). Drain and rinse hominy, add. Salt & Pepper to taste.
Pesole
Pork Roast
1 gal. can Hominy
Red Chile
Salt & Pepper
Cook pork roast till tender,cut up or shred.You can do this several ways, I use crock pot.Add red chile and rinsed and drained hominy. Salt and pepper to taste.
Both are good, on the Pesole you can use hamburger if you want to. Both are really good for hang-overs!
I still had a can of black-eyed peas!
